"GABA TEA" believes good tea is worth the wait. The fresh leaves rest and ferment in a nitrogen-filled, oxygen-free environment, letting them naturally accumulate γ-aminobutyric acid (GABA) — and develop the gentle fruity acidity and lingering sweetness unique to GABA tea.

From castella and Chinese pastries to hand-baked cookies and jelly flowers — made by hand from simple ingredients, and perfect with a pot of Taiwan tea. We also bring this craft into schools and communities, running hands-on classes so more people can taste what "slow" means.

We are a group of people who love tea, and believe good tea deserves to be told well. GABA TEA starts from the origin and centres on people, so every Taiwan tea can be understood, traced and treasured — a care we extend all the way to a slice of handmade castella cake.

Tasting good takes time, and heart
In an age that wants everything fast, we choose slow. Our castella follows the old ways — eggs whipped fresh, batter folded gently, baked long at low heat. The mini mooncakes, pineapple cakes and egg-yolk pastries before Mid-Autumn, the everyday cookies, and the jelly flowers piped one petal at a time all follow the same rule: no additives, no shortcuts.
This commitment mirrors how we treat tea: good things are worth waiting for, and worth making with care. We also bring this craft into schools and communities, so it is remembered by the next generation.
